Fabien Vallélian is undeniably a rebel in Lavaux (Vaud), this paradisiacal oasis on Lake Geneva and a mythical wine region, but unfortunately still too anchored in its classicism and too far behind on environmental issues. On the other hand, Fabien is driven by the desire to go further and further in his experiments and his will to break the codes. As many ideas as projects animate this young hyperactive winegrower whose rhythm is not always easy to follow but who is driven by a beautiful and vibrant passion!

Fabien manages with his father Gérald the Domaine des Faverges, an institution in the Lavaux region that is recognized and exemplary in terms of organic and biodynamic farming. In parallel to this activity, he produces singular and natural wines by recovering clean and healthy grapes from the area and vinifying them according to his own ideas. The result is pure, expressive and always very accessible wines. Fabien thinks of his wines spontaneously and instinctively, accompanying them from day to day and according to his tastes, without any input or sulphites. Finally, he chooses to bottle his juices the moment the wine touches him, whether it’s the day or the middle of the night.

His assertive personality and prodigious intuition make Fabien one of the leading lights of Swiss natural wine, as evidenced by his crucial role in the creation in 2021 of theSwiss Association of Natural Wines (ASVN), as the symbol of a new generation of winemakers in search of freedom and redefinition of codes and traditions.
